Low-fat blueberry muffins

Oh muffins, how I enjoy you. I found this low-fat recipe and I was excited to try it. They taste great with a little butter(or peanut butter on them. I know I am so strange, but it seriously tastes good!) Also I know the butter thing kinda defeats the purpose of making a LOWFAT recipe but oh well. haha .Let's get started:
  • 1 1/2 cups of all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp allspice
  • 1/2 cup of sugar
  • 3 egg whites
  • 3 tbsp lowfat margarine
  • 2/3 cup of 0% plain yogurt
  • 1 tsp vanilla extract
  • 3/4 cup fresh blueberries
Step one:
Place 12 muffin liners in your muffin pan.
Preheat the oven to 375F

Step two:
 Mix the flour, baking soda, salt, and half of the allspice in a large bowl. Add 6 tbsps of the sugar, and mix together well.


Step three:
In a different bowl, whisk the egg whites together. Add the margarine, yogurt and vanilla. Mix together well. Stir in the blueberries. Add this bowl to the flour mixture. Gently stir because you want the batter a little lumpy.

Step four:
Divide the batter into the 12 muffin liners.
Step five:
Mix the remaining sugar with the remaining allspice. Sprinkle it over the muffins.



Step six:
Bake the muffins for 25 minutes (approx.) They must be a nice golden colour and risen. Cool on a wire rack and eat one nice and warm!
