Guindon Guacamole

We make this guacamole all the time. It is a hit whenever we do. It is great to eat whenever...but it is wonderful to serve when you are having guests! I made this for new years eve at my parents place. We had a great night eating delicious food (including baklava, chai lattes, spinach dip, hummus, veggies and homemade pizza) and we played games all night. We also prayed in the new year. I am excited for what God had planned for this year. YAY. Okay back to the food..

-Cut 4 or 5 avocados in half and scoop out the stone. Scoop out and mash the avocado.
-Peel and mince a small onion. Add to the avocado.
-Chop a tomato and add it to the avocado.


STIR in all of these things into the avocado:
-2 tbsps of lemon juice
-1/2 tsp of salt
-2 tbsps mayo
-1/2 to 1 tsp of garlic
-1/2 tsp cumin
-1/2 tsp coriander

SERVE it with nacho chips, veggies and crackers.
