Three Ingredients, HOW EASY IS THAT? I love this recipe, its so easy and quick! This will probably be my last cookie post for awhile... I've been making TOO many! hahah. Lets begin!
-1 cup of peanut butter
-1/2 cup of sugar
MIX EM ALL TOGETHER, AND VOILA!

Put cookies on a greased pan. Cook at 375F for about 15 minutes. Let cool, then EAT! mmm
I saw this soup idea on a blog that I follow & I really wanted to try it! I did make some changes, so I will give you my version of the soup! Dan and I both enjoyed it!
You will need:
-One onion, chopped
-4 cloves of garlic
-2 cans of crushed tomatoes
-one can of corn
-1 tsp of salt
-1/2 tsp of pepper
-1 tsp ground cumin
-1/2 - 1 cup of milk, depending on how you like it
-1 cup of chicken broth
-2 1/2 cups of shredded chicken breasts
-1/4 cup of bacon pieces
-1/2 of a green pepper
-1 cup of black beans
First off you must get your black beans cooking. if you add a tsp of baking soda it helps the process.
Now you have to put your onion and garlic in a food processor or blender. If using a blender I recommend putting a bit of water in it.
We used up the rest of our roasted garlic, mmm.
Next step is to put your crushed tomatoes on medium heat and then add your onion, garlic mixture.
Then add your milk and chicken broth. I would recommend adding a bit of water as well. You want a nice soupy consistancy. My soup was a little thick. Add the pepper, salt, cumin, corn, bacon &green pepper.
Once your beans are done rinse them well & add them. Also chop up your chicken then add that.
Now your ready to eat! It was yummy! Not counting the beans, this meal takes all of 15 minutes to put together. Its super quick and a fun change to the traditional tomato soup. Enjoy!
These cookies are GOOD. I love cookies. They are a super big weakness for me. I found this great oatmeal cookie recipe that lets you choose your favourite ingredients to put in. Have fun with it!
Here we go:
-FAT. You need one cup of fat. I used 1/2 cup of natural peanut butter and 1/2 cup of apple sauce. You can use 1 cup of peanut butter, or half and half with normal butter. You choose. But all you need is one cup.
-SUGAR. I used 1 cup of brown sugar and 1/2 cup of white. You could also use 1 1/2 cups of brown, or 1 cup of white with 1/2 cup of honey. you need 1 1/2 cups total. :)
-1 tsp baking soda
-SPICE. 1 tsp of cinnamon. OR 1/2 tsp of allspice.
-1/2 tsp of salt
-1 tsp vanilla
-FLOUR. 1 1/2 cups of all purpose flour. OR 3/4 c. of all purpose flour & 3/4 c. whole wheat flower.
-3 cups of rolled oats
-1 cup of something extra. Chocolate chips, coconuts, craisins, raisins. You choose ;)
TO START, preheat oven to 350F. In a large mixing bowl beat your fat for 30 seconds. Add your desired sugar, baking soda, spice and salt. Beat until combined, scraping the sides of the bowl.

Okay, continuing on...
Beat in eggs and vanilla. Beat in as much of the flour as you can with the mixer. Then, stir in the rest of the flour and the oats.
Add your something extra. I added raisins.
Bake them for 8-10 minutes. More time if you made larger cookies. :)
As a final touch I added chocolate and caramel to the tops of my plain oatmeal cookies. I wanted something special for when people came over. Anyways, this recipe is awesome and you can try it different ways! I've tried it a few different ways now and I love them each time! Enjoy!
Oh my word! This dip was super good! We had company over yesterday & they loved it too. It was gone fast! I have to send my thanks out to Martha Stewart on this one. You can never go wrong with her, she's awesome! So First things first, if you have never made roasted garlic, you have to right now. It is sooo good! Here is how you do it. Take your garlic heads and cut the tops off of them.
Here you go. Then add about of tablespoon of olive oil over the garlic.
Then you wrap each of them up in tinfoil, set your oven to 400 and let them roast for 30 minutes! You will not be dissapointed!
To use them you must take them out of ther skin. It is very easy to do.
1 head of roasted garlic (or more if you want it more garlic-y)
This was my yummy dinner last night! Super easy, and delicious!
You will need:
-dried medium egg noodles
-2 tbsp sunflower oil
-1 garlic clove
-1 red bell pepper, seeded and thinkly sliced
-6 scallions, sliced
-1 cup of bean sprouts
-3 tbsp soy sauce
-1 tbsp sesame oil
1-Place your noodles in a bowl with boiling water. Let sit.
2-Preheat your wok, or pan, and add your sunflower oil.
3-When the oil is hot, add your garlic, peppers, mushrooms, scallions and bean sprouts(I used more than the recipe called for :) Cook for about 5 minutes.
4-Drain your noodles and add them to your wok. Stir fry for a few minutes then drizzle on your soy sauce and sesame oil.
-Then fill yourself up a big bowl and ENJOY!
Seriously, very easy and quick! I added more bean sprouts because I love them, and they blend in with the noodles. I try not too eat too many breads and noodles, so this way I could have a nice big bowl and not feel bad :) Also very easily made with chicken!
Today I attempted to make vietnamese summer rolls for the first time! I received a great cookbook from a friend at my wedding shower and the front cover was a picture of these beautiful summer rolls! I went through my cookbooks today to try and find something yummy to make. As soon as I picked up this book, I was sold! I needed to have them! So I will share with you my version of the rolls. I didn't have all the ingredients in the house, so I needed to improvise. The original recipe was made with jumbo shrimp and pork tenderloin, but I decided to make mine vegetarian. So here we go!
-4oz of rice vermicelli or I used a quarter cup of rice
-tender lettuce, such as boston or oak leaves, I used baby bok choy
-1 large carrot, peeled and cut into thin stick, I grated mine into small peices, both work well
-1 small cucumber, sliced thinly
-6-12 small, thin scallions
-round rice papers
Ingredients that I added
-celery, cut into thin sticks
-a small handfull of bean sprouts
1-Fill up a bowl with warm-hot water.
2-Dunk the rice paper into the water so that the whole peice is wet. Do not leave it in too long. If it becomes too wet it will be difficult to use.
3-Hold the wet rice paper open in your hand and start to fill it with your delicious veggies! I did not take pictures of the folding process because I had a hard time with it ;)
4- I added my celery to the top just before the last fold to give it a nice touch.
I most definately need more practice with the folding, but they turned out well! They were very yummy. The book says they are best served with a spicy peanut sauce or a sweet sour and spicy fish sauce called Nuoc Cham. If you would like to original recipe of this just contact me and let me know! Here is how to make this sauce. It has a very strong taste, but with the roll, it is very enjoyable.
3/4 cup of fish sauce
1/2 cup of granulated sugar (wisk the sauce and sugar together)
3/4 cup of freshly squeezed lime or lemon juice
1 large clove of garlic
1 to 2 thai chilies
It took alot of time to prepare these... but they were well worth it!
