Whole Wheat & Flax Banana Muffins

I HAVE A RECIPE!
YAY!

I am back in my kitchen! It feels so nice. Seeing as I am supposed to be a food blogger, I figured I should post a recipe. This is my third batch in two weeks. yum!

You need:


  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1 tbsp whole flax seeds
  • 2 tbsp ground flax seeds
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • dash of salt
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 3/4 cup skim milk
  • 1/3 cup unsweetened apple sauce
  • 3 mashed bananas
Also you can add chocolate chips for some extra FUN!

Step one:

Mix all your dry ingredients together. {Flours, flax, baking soda & powder, salt}

 Step two:

Add your wet ingredients to the dry. {Bananas, egg, milk, applesauce, and chocolate chips if you so desire}

Step three:

Heat your oven to 350F and bake your muffins for about 20 minutes. 
This recipe makes 12 muffins. I've had one of these bad boys every morning for breakfast over the past two weeks. YUMMO.

Spiced Bran & Blueberry {Muffins}


Happy Monday everyone! I hope your day has been lovely so far! I worked 8-4 today. A man eating at the restaurant and I started up a small conversation & he told me that I had a beautiful accent! I was quite flattered! I am typically more embarrassed of my accent & I rarely get compliments on it. Then he went on to ask me if I was from Ireland! haha. I said no I am from Ontario, I'm an anglophone. He was shocked. haha he thought I was European. I met someone at the mall a few months ago and he asked me if I was German. He said I had a thick German accent when I spoke French. I laughed and said " well that's funny, because I'm English!". I must have a pretty interesting accent!
Here I am posting YET ANOTHER muffin recipe. It had been two weeks since I last made muffins. It felt wrong. I had no after work snack & I felt lost.
So I fixed that and made muffins!
Here is what you need:

  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 3/4 cup whole wheat flour
  • 3/4 cup white flour
  • 1 1/2 cups oat bran
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup applesauce
  • 4 T canola oil
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp ground clove
  • 1/4 tsp nutmeg
  • 3/4 cup milk
  • one dry pint of fresh blueberries (551 ml)


Step one:
Preheat oven to 400F. Place muffin cups in your muffin pan. Makes 12 muffins.
In a large mixing bowl mix together the flour, w/w flour, oat bran, baking powder, baking soda, salt, cinnamon, ginger, cloves, & nutmeg. Make sure it is combined well.

Step two:
In a separate medium sized bowl mix together your wet ingredients. Honey, sugar, egg, apple sauce, oil & milk.

Step three:
Add the dry ingredients to the the wet. Stir until fully combined. Stir in the blueberries.

Step four:
Pour the muffin batter into the muffin cups. Bake for 15 minutes or until the toothpick comes out clean.

Bran & Currant Muffins

Here I am with yet, another muffin! The cookbook I'm putting together should be just muffins I think! haha. I made these bad boys today & LOVED THEM! I have been wanting to make bran muffins for quite some time..and now that I did I shall be making them ALL THE TIME! Today has been quite the productive day. Laundry {check}, 4 loaves of bread made {check), clean bathroom {check}, read 1/4 of the Catching Fire book(the hunger games are HIGHLY addictive), delicious muffins baked {check} gardening {check}, dishes done...um..not so much. haha I hate doing the dishes. Whenever I bake (which is often) I have to do the dishes like 3 or 4 times. uggggg who in the world likes devoting that much time to dishes. If one of you reading this happens to be that person who LOVES dishes, please feel free to come over anytime ;) haha. I will pay you!
Muffin time:


  • 3 tbsps oil (preferably olive oil)
  • 1 cup unprocessed wheat bran
  • 1/2 cup of skim milk
  • 1/2 cup of unsweetened apple sauce
  • 1/2 cup of dried currants
  • 3 tbsps molasses
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 cup of flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • a little bit of brown sugar to sprinkle on top
Preheat oven to 400F. This recipe makes 9-12 muffins. I made 9, but you can make 12 small muffins.

Step one:
In a bowl or mixer combine the wheat bran, oil, milk, apple sauce, currants, molases, egg, & vanilla.

Step two:
In a separate small bowl mix together the flour, baking powder, salt & baking soda. 

Step three:
Add the small bowl of dry ingredients & mix. Do not over mix.
Step four:
Spoon the muffin batter into muffin cups. Sprinkle a bit of brown sugar and wheat bran on top of each muffin. It will make it look pretty! Bake at 400F for 20 minutes (or until fully baked).

ps: Ohhh I almost forgot to tell you all! I am going to Edmonton next week! I have never been out west & I am super stoked! I am going with my friend Victoria to my friend Katie's wedding! yayy!

Spiced Apple, Cranberry & Almond Muffins

Oh muffins. I actually have some muffins in the oven RIGHT NOW. I love them just a little too much :)
These were oh so scrumptious. I started out to make spiced apple muffins, then I noticed the slivered almonds & cranberries in the cupboard and I just couldn't help but add them! This recipe makes 12 muffins. Here is what you need:


  • 1 cup white flour
  • 1 cup whole wheat flour
  • 3 tbsps of ground up flax seeds
  • 1/4 cup of sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 tsps cinnamon
  • 1/2 tsp nutmeg
  • 2 eggs lightly beaten
  • 3/4 cup of unsweetened apple sauce
  • 3/4 cup of skim milk
  • 2 tbsps of olive oil (or any other oil, I just prefer olive)
  • 2 small/medium apples cut into small pieces 
  • 1/2 cup of dried cranberries
  • 1/4 cup of slivered almonds
Step one:
In a bowl mix together all of your dry ingredients. Flours, flax seeds, baking powder, baking soda, cinnamon, nutmeg & salt. 

Step two:
Now add your wet ingredients. Stirring with each addition. Sugar, eggs, apple sauce, milk, & oil. Once all combined you can stir in the apples, cranberries & almonds. 

Step three:
Spoon the muffin batter into a greased muffin tin. (Or you can use muffin cups) Bake at 400F for 15 minutes or until done. 
** I sprinkled a little bit of brown sugar on the tops of the muffins** 

Cool them on a wire rack. TADA! The perfect snack awaits you..

Zucchini Chocolate Chip Muffins

Hello blogger friends! Well I wish I could say happy Monday, but I am not feeling so happy :( I am still feeling sick.. I hope you all are having a better Monday than me! Today I spent the day sleeping, drinking tea&coffee, finally figuring out how to use pintrest and obsessing over myfitnesspal.com. {By obsessing I mean spending an hour and a half looking at peoples before and after weight loss pictures!} Oh and I did a little cleaning, and I made these muffins! Unfortunately folks this is my only recipe to post this week! I am trying to lose a few pounds before the summer{so not fun} and we ate SUPER plain this week. Steamed veggies with grilled chicken breasts..etc. So the bad news is, only one new recipe this week, but the good news is I have lost 8 pounds in the last 4 weeks! Yay. I can't believe I am sharing such personal info with the world. Who have I become? haha Okay enough about that. I have been working on my little cookbook project and I have decided this recipe is a keeper and is going into the cookbook! I plan on having an entire muffin section seeing as I love them! Here is what you need to make these muffins yourself:



  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 egg, lightly beaten
  • 1/4 cup olive oil
  • 1/4 cup unsweetened apple sauce
  • 1/4 cup skim milk
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini
  • 1/2 cup semisweet chocolate chips

This recipe will make 12 small (very small) muffins. I made 9 muffins at the size I like 'em. :)


Step one:


In a bowl, combine flour, sugar, baking soda, cinnamon and salt. In a separate bowl combine the egg, oil, apple sauce, milk, lemon juice and vanilla.: mix well. 


Step two:


Stir into dry ingredients just until moistened. Fold in zucchini and chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. 


Step three:


Bake at 350F for 20-25 minutes. Check them at 20 minutes. 


YUMYUMYUM. This is me eating one as we speak(or as I write this..)

Honey Apple Spice Muffins

Muffin time! As I write this post I am enjoying every bite of this muffin! Yummy. Here is what you need to make them:

  • 1/2 an apple cut into very small pieces
  • 3/4 cup of white sugar
  • 2 tbsp olive oil
  • 2 eggs
  • 3/4 cup of milk
  • 3 tbsp honey
  • 1 tsp vanilla extract 
  • 2 1/2 cups of flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup apple sauce
Preheat oven to 375F. Makes 12 muffins.

Step one:

In a bowl mix together the dry ingredients. The flour, baking powder, salt, cinnamon & nutmeg.
Step two:
 Now mix together all the wet ingredients in a separate bowl. Oil, sugar, eggs, milk, honey, vanilla, and apple sauce. 

Step three:
Add the wet ingredients to the dry ingredients and mix well. 

Step four:
Pour the muffin batter into the greased muffin pan equally. Take your cut up apples and place them on top of the muffins. Also mix together some cinnamon and sugar. Sprinkle a bit on top of each muffin. 
Bake for 20-25 minutes.

Banana, flax & apricot {muffins}

It's muffin time! Yay! I know that banana, flax and apricot sound like a funny combination..well, you are right. It is quite an interesting combination. Although, somehow it works! These muffins are healthy and yummy at the same time. Plus who doesn't love having more fiber in their diets! We all love fiber ;) Try 'em out!

 Here is what you will need:

1 cup chopped dried apricots

1/2 cup water
1 cup whole wheat flour
1 cup all-purpose flour 
1/4 cup ground flax seeds (use grinder or food processor)
2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1 egg, lightly beaten
1/2 cup sugar
1 cup mashed ripe bananas
3 tablespoons olive oil
3/4 cup milk 


Step one:
Preheat your oven to 350F
Chop your apricots into small pieces. Place them in a small pot with the 1/2 cup of water (feel free to use orange juice as well) and put it on medium heat. Stir and leave it on the heat for a few minutes, then remove from heat. The point of this is for the apricots to absorb the water and thicken/moisten the dried fruit.

Step two:
In a medium bowl mix together all of your dry ingredients. White flour, whole wheat flour, ground flax seeds, baking soda, baking powder & salt.
Step three:
In a separate bowl mix together all of the wet ingredients. The egg, sugar, banana, apricots, olive oil & milk.

Step four:
Now add the wet ingredients to the wet. Mix until fully combined. Do not over mix.
Step five:
Take your muffin batter and evenly separate into muffin cups. I find that using a 1/3 cup is normally the perfect amount. Once they are all ready to go, bake for 20 minutes (or until fully cooked, golden brown).
