Maple Walnut Scones





Happy Monday friends!

Yes, it is Monday. The day that we all dread. But to be honest, this Monday hasn't been so bad. I only worked 4 hours, had lunch with my love, I have a Zumba class tonight and to top it all off, I ate one of these yummy scones for breakfast. Okay, maybe I ate two.

Maple syrup season is starting here in Quebec. The month of April will be spent visiting sugar shacks, eating pancakes every weekend and buying lots of maple syrup on sale. So of course I felt inspired to make these scones! Oh how I love le temps des sucres!

Here's all that you need to make these yummy scones yourself.
(This recipe makes 12 normal sized scones or 8 BIG scones)


  • 1 1/3 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 egg
  • 1/3 cup milk
  • 1/4 cup softened butter
  • 1/3 cup maple syrup
  • 1/2 cup crushed walnuts

Step one:

Mix all of the dry ingredients together in a medium size bowl. Flour, baking soda, baking powder, salt, and cinnamon. 





Step two:

Add all of the wet ingredients into the center on the dry ingredients. Mix until combined evenly.


Step three:

Spoon onto a greased baking sheet ( or a non-stick sheet like what I use). Bake at 425F for 10 minutes or until lightly browned. So keep an eye on them! Do not over bake them or else they will get dry. We don't want that!

Next step... eat one fresh out of the oven with some warm butter or better yet, some maple syrup!

{Easiest} Maple Pie Ever

Sugar pie is super popular here in Quebec. Although Dan does love him some sugar pie,he loves anything maple more...so combine the two and Dan is in heaven! Someone gave us this super easy recipe and it is basically Dans favourite food ever.
We had an awesome Easter weekend! We had Dans brother visit us from New Brunswick.  After a fondue dinner we decided to make maple pie, at like 10:30 at night! How Quebecois does that sound, fondue and maple pie? haha.  Dan and his brother both agreed it was the best pie ever.
I am SO happy that Dans brother came for a visit. Although I didn't find their conversations interesting (they talked about cars and army stuff all weekend,which basically sounds like a different language to me) it was great to see the boys bonding!!

Now to the SUPER easy recipe!!!!
All you need are three ingredients:
  • a can of sweetened condensed milk (Eagle Brand)
  • a can of pure maple syrup 540ml
  • 2 pre made pie crusts

Step one:
Mix the condensed milk and maple syrup together in a bowl.

Step two:
Pour the mixture into the pie crusts.
Step three:
Bake at 350F for 40 minutes!

Baked Pumpkin & Maple Oatmeal



Until this recipe I had NEVER baked oatmeal. Now that I've made this, I think I have been missing out! I know that maple and pumpkin are a little "out of season" but meh! They are always in season in my books! I love pumpkin! Haha. I also made 2 pumpkin loafs and a dozen pumpkin muffins this week. The pumpkin was frozen leftovers from the fall, taken out for this recipe of course! This recipe is a keeper. Fo sho! Of course the recipe was stolen from someone else! Here is what you need to make this yourself! This recipe serves one. When we made it we doubled the recipe. I shall let you decide how much to make :)

  • 1/2 cup oats (50g)
  • 1/4 tsp vanilla extract
  • 1/2 tsp cinnamon 
  •  1/8 tsp nutmeg,
  • 1-2 tbsp maple syrup (depending on how sweet you like your oatmeal)
  • 1/4 cup canned pumpkin
  • 1/4 cup milk
  • 1/8 tsp salt
Step one:
In a baking dish mix together the oats, spices, pumpkin, salt, maple syrup, vanilla & milk. Basically mix everything together :)

Step two:
Bake for 20 minutes in a preheated oven at 380F. (Or until it gets firm)

Step three:
Set your oven to broil, and broil the oatmeal for about 3 minutes.
It will give it a nice crispy top!
...And yes, that is icecream you see with my oatmeal ;)

Maple Pie

mmmm Maple Pie. Last week it was Dan's birthday so I decided to make his this sweet pie! He prefers pie to cake and he is a true sucker for anything maple....so I figured this pie was perfect! It was realy easy to make and it tasted excellent. Add  little bit of non sweetened whipped cream on the side and it is scrumptious. This recipe makes two pies. Here is what you need to do...
-A simple pie crust recipe, and place the unbaked pie crust into the pie pan..
Combine in a large mixing bowl:
-1 cup of brown sugar
-can of eagle brand
-3 eggs
-3/4 cup of maple syrup
-1 tablespoon of flour
-1 tsp vanilla
BEAT it all together with a mixer on high for 5 minutes
POUR into your unbaked pie crusts
BAKE at 400F for 10 minutes. Then reduce the het to 300F for 50 to 60 minutes or until your knife comes out clean:)

We had pretty much already eaten one pe by the time I went to take pictures!

Rich and Creamy Butternut Squash Soup with Maple

At our wedding we ate a DELICIOUS butternut squash and maple soup...So I am on a mission to try and recreate it! I looked online at a bunch of recipes and I played around with them and I came up with this recipe. We love this soup and make it often.

THIS MAKES 4 SERVINGS.

To make this sweet and creamy soup you will need:


  • 2 carrots, chopped
  • 2 tbsp butter
  • celery
  • one large onion, chopped
  • 2 potatoes, peeled and chopped
  • 1 butternut squash, de-seeded, peeled and chopped
  • 1 tsp minced garlic
  • 1 tsp cinnamon
  • 3 cups of chicken broth
  • 1 cup of cooking cream ( or milk for a lighter version)
  • 1-2 tbsp of maple syrup
  • salt and pepper to taste


STEP ONE
Put the butter, celery and onion into a large pot. Let simmer on medium high..stirring frequently.
STEP TWO
Add the chopped up carrots, potato and squash. Let them simmer until you notice the squash becoming a darker, more rich colour.

STEP THREE
Add the chicken broth and let it boil. You want the potatoes, squash and the carrots to become soft and mashable. At the same time add the garlic and the cinnamon.

STEP FOUR
Once the potatoes, squash and carrots are soft and mashable, drain the liquid out of the pot. As you drain the liquid out, put it in a container and set it aside.  It has the cinnamon in it and we still want to use it! Once you have done that, it is time to mash everything together with an electric mixer ( or in a food processor)

STEP FIVE
Once the vegetables have been well mixed and mashed together you can add back 3/4 of the liquid you took out and one cup of table cream. Also add in your 1 to 2 tbsp of maple syrup! Add your salt and pepper to taste. Stir until you find the right consistency.



Now EAT and ENJOY!
