Honey Soy Chicken

Hello, hello friends! It's Tuesday! I'm sorry for not blogging on Monday, but I hope my 4 delicious recipes make up for it! I hope you all are having a great start of the week and you're all making scrumptious food! I found this recipe on Pinterest (my new found love) and I wanted to share it with you all! I obviously can't take credit for the recipe so I will share the link! I really liked this recipe. I was a little lazy and I didn't marinade the chicken for the full 3 hours (it was more like 30 minutes haha). Although I didn't follow the instructions with the marination I recommend that you do! Give this recipe a try on your next Asian food night!

Before I get started I would just like to just say that this is my 103rd recipe! How exciting! I should celebrate! I will celebrate by eating this dish as soon as I'm done writing this post :) This amazing dish has been smelling up my house all day in a very good way. If you want an easy meal for dinner this week, here it is. It took me 10 minutes to prepare and then I let it cook for 5 hours! So easy. It is a perfect combo of sweet and hot! Here is what you will need to make this yourself:

  • 2 onions, chopped
  • 2 green peppers, chopped
  • 3 chicken breasts, cut into bite size pieces
  • 1 can of pineapple or 1/2 a pineapple cut into bite size pieces
  • 1/2 cup of chili sauce
  • 1 1/2 cups of water
  • 2 cloves of garlic, minced
  • 1 bottle of bbq sauce OR use my easy tangy BBQ sauce recipe. You can find it on the post below this one. That is the recipe I used for this meal and I used the entire recipe.
Step one:
Put the onion, garlic, pineapple, chicken and peppers into the slow cooker. Mix them all together like so...
Step two:
Mix the bbq sauce, water and chili sauce together in a bowl. Then pour it over the chicken mixture in the slow cooker.

Step three:
Let it cook on high for 4-5 hours.
Enjoy! It will be an amazing, sweet, hot, sour, tangy, wonderful dinner for you.

Have a good week everyone!

Spicy szechuan pork

Hello everyone! It is 10 right now and I have finally decided that I should post my recipes! I have had quite the day. I actually woke up today at noon! I am totally embarrassed to admit that, and I promise you it doesn't happen often. I must have needed to sleep! Dan walked into the house at noon today and he woke me up. I was like "Why the heck are you home right now, you are supposed to be working!!" and he told me he was home for lunch and it was noon. haha. Anyways, today was a good day. I went out for coffee with a friend from church. I made some delish food and I skyped with my parents. They just bought a laptop and they are learning how to use it. It is really nice to skype with them though. My dad went into the hospital last Wednesday to start his treatments and prepare for his transplant. Seeing as I can't be there with them, it is really good to see their faces.
We made this Chinese dish a few weeks back when we had a friend over. It twas very good. She liked it so much she went home and made it herself later that week!!

You need:
-4 or 5 pork chops
-1 tbsp vegetable oil
-1-2 tbsps chili sauce(or more :)
-a few tbsps of black beans. You can mash them or put them in a food processor.
-1 green pepper, cut into slices
-1 red pepper, cut into slices
-1 tsp sugar
-1 tsp dark soya sauce
pinch or pepper

Step one:
Bring a pan of water to a boil and add your pork. Cover and simmer on low for 20 minutes. Take out the pork and let it cool. Cut the pork into slices.

Step two:
In a wok (or deep frying pan) heat the oil and the pork slices. Cook and let them shrink a bit. Add the chili sauce, and the black bean paste that you made.

Step three:
Lastly, toss in the sliced peppers. Add  the pepper, sugar, soy sauce and stir fry for a few minutes. Serve warm and ENJOYYYY!

Spicy sesame broccoli

I make this recipe quite often actually. It is one of those recipes I can count on and that I know I will always enjoy. Whenever I make a new Chinese recipe, this tends to be what I make to go with it. I decided that today would be the day that I share this recipe with you all. Here's what you need:
*serves 4*
  • 2 tbsps oil
  • 2 medium heads of broccoli, cut
  • 2 tbsps soy sauce (sometimes I add a little extra :)
  • 1 tsp cornstarch
  • 1 tbsp sugar
  • 2 tsps grated fresh ginger root ( we freeze our ginger root and grate it from frozen)
  • 1 garlic clove, crushed
  • 1 tsp or more of chili flakes
  • 1 tsp of toasted sesame seeds
Step one:
In a bowl mix together:
-soy sauce, cornstarch, sugar, ginger, garlic and chili.

Step two:
In a frying pan heat up the oil and fry the broccoli on medium heat. About 5 minutes.

Step three:
Pour the soy sauce mixture onto the broccoli. Cook for another few minutes then add the toasted sesame seeds.
Voila. Yummmmmmyyy broccoli!

General Tao Chicken

It was Dan's birthday so we could totally justify making fried food. I love general tao chicken..a lot. We have made general tao a few times now but this is by FAR the best recipe we have used.
We of course changed the recipe and made it our own, because that's just what we do!
If you want to make a yummy Chinese dish..this is what you should make! You will not be disappointed!

This recipe makes 6 servings.
To start you will need:

  • 2 pounds of boneless skinless chicken, cut into chunks
  • 1/4 cup of corn starch
  • 2 eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 tbsp white flour
  • 1 tsp baking powder
Step one:
Coat the chunks of chicken in the corn starch.
Beat the eggs, salt and pepper. Add the flour and baking powder until there are no clumps and it's nicely mixed. Now add the chicken to the egg mixture and coat them evenly.

Step two:

Heat up the veggie oil on a frying pan on high. Drop the chicken pieces into the hot oil and deep fry them until golden brown. We had to do this a few times because not all of our chicken fit into the frying pan & we didn't want them to stick together because they were frying too close.
You want them to be fully cooked. "They" say it should take about 12 minutes. Set aside when the chicken is done cooking.

Step three:

NOW you need to make the sauce:

In a separate frying pan heat up the following ingredients on medium/high:
  • 4 tsp sesame oil
  • 2 tbsp fresh grated ginger
  • 1/2 cup of green onions chopped into small pieces
Cook for about a minute or two. Then add:
  • 1/2 cup of water
  • 1/4 cup distilled white vinegar
  • 1/2 cup white sugar
  • 2 tbsp corn starch (be sure to whisk it immediately into the sauce or else it will be clumpy)
  • 2 tbsp soy sauce
  • 1/4 cup ketchup
Cook it until it is all the way heated up & it becomes "saucy".

Step four:
Stir the chicken into the sauce. Make sure they are all fully coated in the sweet goodness.

Serve HOT and enjoy!

Chow Mein

This was my yummy dinner last night! Super easy, and delicious!
You will need:
-dried medium egg noodles
-2 tbsp sunflower oil
-1 garlic clove
-1 red bell pepper, seeded and thinkly sliced
-mushrooms, sliced
-6 scallions, sliced
-1 cup of bean sprouts
-3 tbsp soy sauce
-1 tbsp sesame oil

1-Place your noodles in a bowl with boiling water. Let sit.
2-Preheat your wok, or pan, and add your sunflower oil.
3-When the oil is hot, add your garlic, peppers, mushrooms, scallions and bean sprouts(I used more than the recipe called for :) Cook for about 5 minutes.
4-Drain your noodles and add them to your wok. Stir fry for a few minutes then drizzle on your soy sauce and sesame oil.
-Then fill yourself up a big bowl and ENJOY!
Seriously, very easy and quick! I added more bean sprouts because I love them, and they blend in with the noodles. I try not too eat too many breads and noodles, so this way I could have a nice big bowl and not feel bad :) Also very easily made with chicken!
