Oatmeal Pumpkin Raisin Cookies (NO EGGS)

Recipe time!

I have about 5 recipes up my sleeve ;) I have just been too lazy busy to put them online! But here I am!
These cookies were my creation yesterday! I was about to start making pumpkin spice muffins, but then I remembered I had no eggs. Sad, sad day. So I decided I would come up with something else. Let me just say that Dan is a fan :) They are like half gone!

These cookies are a bit lighter than a normal ooey gooey cookie. Here is Quebec they would probably call this a "galette" rather than a cookie. This recipe will make 1-2 dozen cookies, depending on how big you make them.
Here is what you need to do to make these babies:

Mix together the wet ingredients in a large bowl:

  • 1/2 cup of brown sugar
  • 1/2 cup of pumpkin puree
  • 1/4 cup of oil (I used olive)
  • 1/2 tsp vanilla
Now mix together the dry ingredients in a separate medium sized bowl:
  • 1/2 cup of white flour
  • 1/2 cup of oats
  • 1/2 tsp each of baking soda, baking powder, cinnamon & nutmeg
  • 1/4 tsp salt
  • 1/4 tsp ginger
Mix the dry into the wet ingredients & add 
  • 1/2 cup of raisins


Separate your batter onto a greased baking sheet to make the size of cookies you desire.

BAKE at 350F for 12-15 minutes (or if you make larger cookies, bake for longer)

Sweet & Salty Pumpkin Seeds

Hello!
Pumpkin! Oh yes, pumpkin. I love everything pumpkin! Have I said that before?
Here is my latest pumpkin recipe!
I wanted to make something a little different from the normal lightly salted pumpkin seeds. So here we go!
I found a recipe online & I slightly modified it, of course.
Unfortunately, my picture doesn't look quite like the one they have on their website. Mine are a lot darker. They are darker yes, I think they taste marvellous!

What to do?


  • take 2 cups of pumpkin seeds( Mine were from a large pumpkin, or you could use 2 medium size pumpkins) and BAKE them at 300F for 50 to 60 minutes.




  • Once they have baked for an hour take them out and cover them with 2 tbsps of butter or margarine, 1 tbsp of brown sugar, 1 tbsp white sugar, 1/2 tsp of ground cinnamon, 1/2 tsp salt
  • BAKE your seasoned seeds for an additional 10- 15 mins at 350F
  • ENJOY!

Baked Pumpkin & Maple Oatmeal



Until this recipe I had NEVER baked oatmeal. Now that I've made this, I think I have been missing out! I know that maple and pumpkin are a little "out of season" but meh! They are always in season in my books! I love pumpkin! Haha. I also made 2 pumpkin loafs and a dozen pumpkin muffins this week. The pumpkin was frozen leftovers from the fall, taken out for this recipe of course! This recipe is a keeper. Fo sho! Of course the recipe was stolen from someone else! Here is what you need to make this yourself! This recipe serves one. When we made it we doubled the recipe. I shall let you decide how much to make :)

  • 1/2 cup oats (50g)
  • 1/4 tsp vanilla extract
  • 1/2 tsp cinnamon 
  •  1/8 tsp nutmeg,
  • 1-2 tbsp maple syrup (depending on how sweet you like your oatmeal)
  • 1/4 cup canned pumpkin
  • 1/4 cup milk
  • 1/8 tsp salt
Step one:
In a baking dish mix together the oats, spices, pumpkin, salt, maple syrup, vanilla & milk. Basically mix everything together :)

Step two:
Bake for 20 minutes in a preheated oven at 380F. (Or until it gets firm)

Step three:
Set your oven to broil, and broil the oatmeal for about 3 minutes.
It will give it a nice crispy top!
...And yes, that is icecream you see with my oatmeal ;)

Pumpkin Muffins

Here I go again with the pumpkin! I LOVE pumpkin if I haven't already said that enough on this blog! This will probably be the last pumpkin recipe for awhile because I finished all of the pumpkin today :(  These pumpkin muffins were an expirament for me to try and make normal pumpkin muffins a big healthier. They are very moist and yummy so I think they turned out well!

(Preheat your oven to 400F, makes 12 muffins)

To get started mix all of your dry ingredients together in a large mixing bowl.
-2 cup of flour
-1/4cup of white sugar
-1/4 cup of brown sugar
-1 1/2 tsps baking powder
-1/2 tsp baking soda
-1/4 tsp salt
-1 1/2 tsp cinnamon
-1 tsp nutmeg

Mix your wet ingredients together:
-3/4 cup of buttermilk or sourmilk
-1 to 1 1/2 cups of pumpkin
-3 tbsps of olive oil
-2 eggs, lightly beaten

Now Add your wet ingredients to the dry and mix.


Next add some dried cranberries or raisins. Also some chopped walnuts are a nice touch.

Grease your muffin tin. Fill each to about 3/4 full...Like so...
Now mix a bit of cinnamon and brown sugar together in a small bowl.

Add it to the top of each muffin!

Bake the muffins for 15 to 18 minutes. Cool on a wire rack.

Pumpkin Loaf

I love pumpkin. I also love fall. I am not going to lie...I have made about 6 loaves of pumpkin loaf this fall. I promise that I shared! haha. I love all fall foods. Pumpkin, apple, pies, soups and stews..are all my favs..and I have been eating delicious fall foods all fall long! I'm sorry that I haven't been sharing the recipes!
This recipes is a good one. It is bad for you though...I must warn you. So make this if you are having company and you are going to share...because if not.. you will probably eat ALOT of it yourself!
This makes 2 loaves.

Here is what you will need:
-3 cups of sugar
-1 cup oil
-4 eggs
-3 1/3 flour
-2 tsps baking soda
-1 1/2 tsp  salt
-1 tsp ground cinnamon
-1 tsp nutmeg
-1 15 ounce can of pumpkin...or your own 15 ounce cooked pumpkin

First thing that I did was chop up my pumpkin and boil it.


I boiled it then drained the water out. I then mixed the pumpkin with a hand electric mixer. A food processor or blender would probably work best.

STEP ONE:
-Preheat oven to 350F
-Grease 2 loaf pans and set aside
-In a large mixing bowl beat sugar and oil with an electric mixer on medium speed
-Add the eggs and beat well
-Set the suagr mixture aside

STEP TWO:
-In a large bowl combine flour, baking soda, salt, cinnamon and nutmeg
-Alternately add the flour mixture and 2/3 cup of water to the suagr mixture, beating on low speed after each addition just until combined
-Beat in the pumpkin, spoon the batter into the prepared loaf pans
STEP THREE:
-Bake for 60 minutes. (Or more..mine have taken an hour and 20 minutes before. Keep an eye on them and poke the center with a tooth pick or knife and see if it comes out clean. When it comes out clean, it's done)
-Cook on a wire rack for 15 minutes


We couldn't help ourselves...we started to eat it before I took the pictures!

Pumpkin Seeds

Hello Everyone! I am posting pretty late today..but it is still MONDAY! hhaha. I told you I would post on mondays...and here I am. Things have been pretty crazy around the Guindon household... Dan has been working crazy on his physics work (he is currently studying online) and other things on top of that have made for a crazy week. The good thing about a crazy/ stressful week means I got lots of COOKING in! It always seems to cheer me up. This week I started getting festive. I love fall. This week on my way home from work I had a huge smile on my face because I saw the trees changing colour. That means I get to start wearing warm sweaters and scarves. I love fall. Not to mention that my birthday is in the fall..which probably makes me like it so much. ANYWAYS....my point was that I bought a pumpkin. I just had to. I just love fall and I couldn't wait to start cooking yummy pumpkin things! Which brings me to this blog entry! Pumpkin seeds. Seriously so yummy. Here is a quick recipe online...
